ZUCCHINI BREAD 
3 eggs, beaten until foamy
1 c. Crisco salad oil
2 1/2 c. sugar
2 c. grated zucchini
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 c. flour
1 c. walnuts (ground)

Add to eggs, oil and sugar. In a bowl, mix zucchini, cinnamon, salt, baking soda and baking powder. Mix well and add to the egg mixture and mix well. Then add flour and walnuts; mix well. Grease and flour 2 loaf pans and bake at 350 degrees, 45 minutes.
