SHEPHERD'S PIE | |
1 1/2 lb. boneless lamb, cut into 3/4" cubes 2 med. tomatoes, chopped 1 med. onion, thinly sliced & separated into rings 1/4 c. all-purpose flour 2 tsp. instant chicken bouillon 1/2 tsp. salt 1/4 tsp. pepper 3/4 c. water 6 servings instant mashed potatoes 1. Place lamb, tomatoes and onion in 3 quart casserole. Mix flour, bouillon, salt, pepper and water; stir into lamb and vegetables. Cover. 2. Microwave at high (100%) 5 minutes. Stir. Reduce power to medium-high (70%). Microwave, covered, until lamb is tender, 25-30 minutes, stirring after half the cooking time. If using oven other than Sharp Carousel, stir 3-4 times during cooking. 3. Let stand, covered, while preparing potatoes according to package directions. Spoon mounds of hot mashed potatoes over lamb mixture. Microwave at high (100%) 1 minute to set potatoes. Makes 4-6 servings. |
