ASPARAGUS CHEESE CASSEROLE 
2 c. cooked asparagus (frozen, fresh, or canned)
3 sliced hard-cooked eggs
1 c. shredded Cheddar cheese
1/2 c. bread crumbs
3 tbsp. butter
1 tbsp. chopped onion
2 tbsp. flour
1 c. milk
1/2 tsp. salt
Dash of pepper
1 c. cooked meat or chicken (optional)

Melt butter, add onion, and cook until tender. Add flour and blend. Add milk and cook until thickened. Add seasonings and cheese. Alternate layers of asparagus and egg slices with sauce in buttered casserole dish. Top with crumbs. Bake at 350 degrees for 25 minutes or until crumb topping is browned.
