SAUSAGE CASSEROLE 
1 1/2 lb. kielbasi
2 med. onions
1 pkg. or can mushrooms
1 pkg. rice pilaf
6 slices mozzarella cheese (amount optional)
1 can whole tomatoes, crushed
2 lg. green peppers
Salt & pepper

Cook rice pilaf according to package directions. Line bottom of casserole with cooked pilaf. Fry sausage, onions, peppers and mushrooms. Layer this mixture on top of pilaf, top with tomatoes and some juice from tomatoes. Top with cheese and bake at 350 degrees until hot and bubbly (20-30 minutes).
