1 egg
1 c. sugar
1/2 c. shortening
1 c. mashed bananas (3 sm.)
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
2-3 tbsp. hot water

Mix in order given, dissolving soda in hot water. Bake at 350 degrees for 15-20 minutes. This recipe makes 18 cupcakes. Frost with powdered sugar frosting.
