FRESH APPLE CAKE 
1 1/2 c. vegetable oil
2 c. sugar
3 large eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
3 c. raw, sliced apples (tart)
1 1/2 c. pecans
1 tsp. vanilla

Icing:

1 c. packed light brown sugar
1 stick butter
1/4 c. milk or cream
1 tsp. vanilla

On low speed of mixer, mix oil, sugar and eggs. Mix by hand from here on. Mix flour, soda and salt. Add to oil mixture. Add vanilla. Stir in apples and pecans. Mix well by hand. Pour into greased 9 x 13-inch baking pan.

Bake at 325°F for 50 minutes to 1 hour.

Combine icing ingredients. Bring to a boil, simmer for 3 minutes. Pour over cake while it is still very warm.

Yield: 16 servings.
