ITALIAN POTATO PUFF 
2 c. unseasoned mashed potatoes
1/2 c. chopped onion
2 tbsp. chopped parsley
1 c. Ricotta
1/2 c. grated cheese (Parmesan)
3 eggs
1/2 tsp. very fine minced garlic
1/2 tsp. pepper
8 oz. Mozzarella cheese, sliced
1 tsp. salt
2 tbsp. melted butter

Combine mashed potatoes, onions, parsley, Ricotta, grated cheese, eggs, salt, garlic, pepper, butter and mix well. Spread half the mixture into a buttered 8 inch square baking dish. Cover with half the sliced Mozzarella. Spread remaining potato mixture on top and add another layer of Mozzarella.

Sprinkle with grated cheese. Cover with tin foil. Bake at 350 degrees for 30 minutes. Remove foil and continue baking 15 minutes or until cheese is bubbling.
