HOT BACON DRESSING | |
1/2 lb. onions, finely chopped 1 1/2 lb. bacon, diced 1 pt. water 1 pt. vinegar 8 oz. sugar 1/4 oz. salt 1/2 tsp. pepper 1 lemon juice 1 1/2 oz. soy sauce 1/4 oz. ground dry mustard Corn starch Water Saute onions and bacon until bacon is crisp and onions are clear. Drain off fat and save. Combine water and vinegar, lemon, soy sauce. Heat to boil. Add sugar, salt, pepper and mustard. Mix corn starch and fat from the bacon to a smooth paste. Stir in boiling liquid. Cook 10 minutes. Add bacon and onion mix. Cool down and put in ice box. Daily heat up what you need and put 2 ounces on spinach salad just before serving or serve on side to customer. |
