STRAWBERRY MUFFINS 
2 tbsp. shortening
1 3/4 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 tsp. baking powder
1 egg
1/2 c. sugar
1/4 c. oil
1/2 c. milk
1 c. fresh strawberries cut into quarters

Combine flour, cinnamon, salt, cream of tartar and baking powder. Add egg, sugar, oil and milk with spoon, blend until well mixed. Add strawberries and mix well until strawberries are scattered throughout batter. Fill paperlined muffin cups 2/3 full. Bake in preheated 400 degree oven for 20 minutes. Yields: 12 muffins.
