MEXICAN CORN BREAD 
1 c. yellow corn meal
3/4 tsp. salt
1/2 tsp. baking soda
2 eggs
1 c. milk
1 can creamed corn
1/2 c. bacon grease (optional)
1 lg. onion, chopped
1/2 lb. cheese, grated
2 jalapeno, chopped fine, no seeds
1/2 lb. ground beef

Mix first 7 ingredients together and set aside. Prepare onion, cheese and pepper; keep separate. Brown the ground beef and drain. Grease large iron skillet and heat. Sprinkle a very thin layer of corn meal in skillet and let brown slightly.

Pour 1/2 of batter in skillet. Sprinkle cheese evenly over batter, then meat, onions and peppers. Pour remaining batter over the top. Bake at 350 degrees for 40-50 minutes.
