MEXICAN SURPRISE 
1 lb. ground turkey
1 (7 1/2 oz.) can jalapeno relish
1/2 c. hot taco sauce
1 (15 oz.) can pinto beans
3 c. white rice
1/2 c. mild shredded cheddar cheese
1 tsp. basil leaves
1/2 tsp. red peppers

Boil rice until tender. While rice is boiling, brown turkey over medium heat. Once brown, add basil leaves and red peppers. Cook for a few minutes. Add relish and beans at the same time. Mix together. Cook for 3 to 5 minutes. Add cheese and stir until melted. Once melted, let simmer for 5 minutes. Serve over plain white rice. Serves 8.
