CHEESE AND SPINACH MANICOTTI 
8 c. spaghetti sauce
12-16 manicotti noodles (raw)

Combine:

2 lbs. Ricotta cheese
1/4 lb. grated Mozzarella cheese
1/2 c. Parmesan cheese
2 eggs
1 c. cooked, chopped and squeezed spinach
1/4 c. dry seasoned bread crumbs
1/2 tsp. basil

Stuff the noodles. Spread 1/3 of spaghetti sauce in 9 x 12 inch baking dish. Cover with remaining sauce. Bake at 350 degrees for 45 minutes (covered). Uncover and top with 1 pound thinly sliced Mozzarella cheese. Bake 5 to 10 minutes to melt cheese.
