DUCK GUMBO 
2 ducks (or geese)
2 qt. water
1/2 c. butter
1/3 c. flour
2 onions
3 stalks celery
1 bell pepper
2 cloves garlic
Green onions
1 can tomato sauce
1 can tomatoes
1 tsp. parsley
1/2 tsp. oregano
1 tsp. salt
1/2 tsp. each black & red pepper
1 pkg. frozen okra
1 tsp. file gumbo
2 qt. duck broth

Boil duck in water until tender. Cool and remove from bones. Melt butter. Add flour and brown. Add all vegetables. Add tomato sauce and tomatoes. Add duck broth, okra and seasonings. Add cooked duck meat cut into small pieces. Cook about 1 hour. Add file if you like. Serve over cooked rice.
