OATMEAL DROP COOKIES 
1 c. shortening
2 c. packed brown sugar
2 eggs
2 c. old fashioned rolled oats
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. vinegar
1/2 c. raisins (if you like)
1/2 c. chopped nuts

Beat shortening with an electric beater at high speed for 2 minutes. Add brown sugar, beat for 3 minutes. Add eggs one at a time, beating for 1 minutes at high speed. After each addition; add rolled oats. Mix for several seconds. Sift flour, baking powder with salt, (use plain or self rising flour). Add to egg mixture. Mix with spatula, stir in remaining ingredients. Drop by teaspoonful onto ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
