CHEESELESS CHEESECAKE 
1/2 c. Granola
1/2 c. boiling water
2 pkgs. unflavored gelatin
20 oz. crushed pineapple
1 1/3 c. dry powdered low fat milk
3 tsp. vanilla
1 tbsp. orange juice concentrate
2 tsp. lemon juice
1 ripe banana
1 tsp. orange rind grated
1 tsp. lemon rind grated
Garnish with strawberries and cinnamon

Line bottom of 8 or 9 inch pie pan with granola; sprinkle gelatin over water, let stand 2 minutes. Add water, pineapple, dry milk, vanilla, orange juice, lemon juice and banana to blender or food processor. Blend until smooth and fluffy.

Stir in grated rinds, turn into pie plate. Chill until firm. Garnish with strawberries and cinnamon. Cut into 2 inch slices. Serves 10.
