BROCCOLI TURKEY SALAD 
8 oz. (1 can) pineapple chunks, unsweetened
2 c. salad greens, torn
2 c. spinach (fresh), torn
2 c. broccoli florets
1 green pepper, cut in strips
1/3 c. red onion, thin sliced
2 c. turkey, cooked and cubed
1 1/2 c. olive oil
1 tbsp. vinegar, red wine
1 tbsp. poppy seeds
1 tsp. sugar
2 tsp. Dijon mustard

Drain pineapple, reserving 2 tablespoons of the juice and set aside.

In a large bowl combine greens, spinach, broccoli, pepper, onion, turkey and pineapple.

In a small bowl combine 2 tablespoons pineapple juice, olive oil, vinegar, poppy seed, sugar and mustard. Mix well. Pour over salad greens and serve immediately.

Makes 10 servings (1 serving = 1 cup = 111 calories and 7 grams of fat).
