KATHLEEN MCADAM'S SCOTTISH
SHORTBREAD
 
2 c. flour
1/2 c. sugar
2 cubes butter

Mix flour and sugar together. Add butter and knead until smooth. Shape into a "brick" and cut into 6 equal pieces. Flatten each into a round. Prick edges with a fork and cut into 8 triangles. Lift with a spatula onto a baking sheet about 1/2 inch apart. Bake approximately 30 minutes at 300 degrees. Cookies should be pale on top - light golden brown on bottom. Freezes well, defrosts quickly. Makes 4 dozen cookies.
