IRISH RAISIN SODA BREAD | |
3 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 eggs 1/3 c. chopped nuts 1/2 c. currants 1/2 c. dark raisins 1/2 c. white raisins 1 tsp. caraway seeds 1/2 c. butter 1 1/2 c. buttermilk Sift flour, salt, baking soda and baking powder, sugar. Add butter with fingers. Crumble until fine like bread crumbs. Add nuts and raisins. Make a well. Drop in well. Add buttermilk and stir. Mix well. The mixture should not be soft. Pour into a greased and floured 9x13 pan or tube pan. Bake at 350 degree oven for 45 minutes to 60 minutes. |
