LEMONY SPINACH CASSEROLE 
3 (10 oz.) pkgs. frozen chopped spinach
1 (8 oz.) pkg. cream cheese
2 tbsp. fresh lemon juice
1 tsp. finely grated lemon rind
1/2 stick butter
1/2 tube Ritz crackers, crumbled
1/2 stick butter, melted

Soften cream cheese and 1/2 stick butter in greased casserole. Cook spinach using as little water as possible. Drain well, pressing out most liquid. Add hot spinach, lemon juice and rind to cheese and butter in casserole. Mix until cheese melts. Clean edges of dish as necessary. Pour melted butter over cracker crumbs in small bowl and mix well. Sprinkle over spinach. Bake uncovered at 350 degrees until crumbs brown (about 25-30 minutes).

Recipe may be reduce - use 1 package spinach and 1 (3 ounce) package cream cheese, etc.
