PUMPKIN ROLL 
3 eggs, beaten
1 c. sugar
2/3 c. canned pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour
1 tsp. salt

Mix all ingredients until smooth. Spread over greased jelly roll pan, lined with wax paper, grease wax paper also. Pour batter evenly. Bake at 350 degrees for approximately 15 minutes; watch.

Sprinkle powdered sugar on top of a dish towel. Slip cake from pan onto the towel. Peel off wax paper. Roll cake into jelly roll style. Cool. When cool, un-roll, remove towel and fill with: 1 tsp. vanilla 2 tbsp. soft butter 1 c. sifted powdered sugar 1/4 to 1 c. chopped walnuts

Spread onto cake, and re-roll, and refrigerate. Delicious.
