BLINTZ SOUFFLE 
2 pkg. frozen blintzes
6 eggs
1 pt. sour cream
1/4 c. sugar
1/4 lb. melted butter
1/4 tsp. vanilla
Frozen strawberries in syrup and sour cream (optional)

I use cheese blintzes but cherry or blueberry or combination of two kinds works great.

Lay blintzes flat in a rectangular Corning Ware or Pyrex dish. Beat eggs well. Combine rest of ingredients with eggs and pour over blintzes. Bake at 350 degrees for approximately 1 hour or until lightly brown. Serve with additional sour cream and/or thawed frozen strawberries with syrup.
