PINEAPPLE SURPRISE CAKE 
1 egg, beaten
2 c. sugar
2 c. flour
2 tsp. baking soda
1 (20 oz.) can crushed pineapple, including juice
1 tsp. vanilla
1/2 c. chopped nuts
1/4 tsp. salt

Beat egg. Add sugar and beat again. Sift dry ingredients. Add to egg and sugar and mix thoroughly. Pour into greased oblong pan. Bake at 350 degrees for 30-35 minutes. Be sure the center of cake is springy to touch. Ice while warm with Cream Cheese Icing. This is a very easy cake. It also freezes well to serve later. It's rich like a carrot cake!

ICING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter, softened
1 3/4 c. powdered sugar
1 tsp. vanilla
1/2 c. chopped nuts

Beat cream cheese and butter together. Sift in powdered sugar and beat until smooth. Add vanilla and nuts; mix well. Spread on warm cake.
