In a large skillet heat 2 tablespoons oil. Add 1 pound of beef, pork or chicken or combination that has been cut into strips. Add 2 cloves of minced garlic. Stir-fry 5 minutes or until tender then remove from heat.
Warm 2 tablespoons oil and add 2 cups broccoli, cut up, 2 onions cut into thin strips and one carrot, sliced. Stir-fry this then add mushrooms and stir-fry until vegetables are tender crisp.
Make a sauce of 2 tablespoons cornstarch and 1 1/2 cups water; stir until smooth then add 1/3 cup soy sauce, 1/3 cup Karo syrup and 1/4 to 1/2 tablespoon crushed red pepper. Stir sauce and add to meat and vegetable mixture. Stir constantly and bring to boil. Add little ginger if desired. Serve over rice or Chinese noodles.
