SWEDISH MEATBALLS 
1 lb. ground beef
2 tbsp. onions, grated
1 tsp. parsley, chopped
3 eggs, beaten
1/3 c. tomato juice
Dash pepper
1 c. quick oats
1/8 tsp. nutmeg
1 c. mushroom soup
1/2 c. buttermilk

Combine all ingredients - except soup and buttermilk. Shape into balls and brown in heavy skillet. Combine soup and buttermilk. Pour over meatballs. Cover and bake at 300 degrees for 1 hour. Yield 4-6.
