BANANA BRAN MUFFINS 
1 c. all-purpose flour
1 tbsp. baking powder
1/4 c. sugar
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. Kellogg's Bran Flakes cereal
2/3 c. skim milk
2/3 c. mashed, fully ripe bananas
2 egg whites
1/4 c. Promise, melted
1/2 c. raisins

Stir together flour, baking powder, sugar, salt and spices. Set aside. Stir together Kellogg's Bran Flakes cereal, milk and bananas in mixing bowl. Let stand 1-2 minutes or until cereal is softened. Beat egg whites until foamy. Add egg whites and Promise to cereal mixture. Beat well. Add flour mixture; stir in raisins, stirring only until combined.

Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups. Bake at 400 degrees about 25 minutes or until lightly browned. Yield: 12 muffins. Per serving: 1 muffin, 150 calories, 4 g. fat, 312 milligrams sodium and 27 milligrams cholesterol.
