BANANA FRITTERS 
4 med. over ripe bananas
1 1/2 c. all-purpose flour
1/2 tsp. baking powder
1/2 c. sugar
1/2 tsp. vanilla
1/2 tsp. cinnamon
Oil for frying
Water

In medium bowl, mash bananas, then add flour and sugar; mix well. Add small amount of water, a little at a time, and beat until batter is smooth and satiny. Add baking powder, vanilla, and cinnamon. Sit for 5 to 10 minutes. Preheat oil in large frying pan. Pour about 3 to 4 tablespoons of batter in pan to form circle. Repeat until pan is full. Let brown for 2 to 3 minutes, then turn and brown other side. When fritters are golden brown, lay on paper towel to absorb excess oil. Best served when hot.
