LEMON OATMEAL COOKIE 
2 c. flour
1 tsp. baking soda
Pinch salt
2 c. butter (do not substitute butter)
2 c. sugar
2 tsp. lemon extract
3 c. old fashioned rolled oats

Place in small bowl flour, soda and salt. Combine butter and sugar; beat until creamy and light, 8 minutes. With mixer on low speed. Add flour mixture and the lemon extract until completely blended. Stir in the oats.

Drop by spoonful on ungreased cookie sheet. Bake 9-12 minutes until golden brown. Let cookies cool on baking sheet. Oven temperature 350 degrees.
