JAMAICA PEAS AND RICE 
This famous dish is known locally as the "Watchman" throughout the Caribbean.

1 c. red peas
1 med. onion, chopped
1/2 sweet pepper
1 or 2 tomatoes, chopped
2 c. rice, washed & clean
1 coconut, grated
1 c. coconut milk
1/2 c. beef or bacon
2 tbsp. fat

Boil the peas until tender in 3 cups boiling water. Heat the fat in a frying pan and brown the chopped onion, sweet pepper, tomatoes and chopped beef or bacon. Add the rice, coconut milk and the cooked meat, seasonings to the peas. Cook until the rice is done, stirring constantly.
