JOAN'S NORWEGIAN APPLE CAKE 
1 3/4 c. sugar
1 1/4 c. flour
2 eggs
2 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt
1 c. chopped pecans
2 c. diced apples (greenings or Granny Smith)
1/4 c. Wesson oil

Mix sugar, flour and unbeaten eggs. Add baking powder, salt and vanilla. Mix well by hand. Stir in apples and nuts. Pour into well greased 10 inch glass pie plate.

Bake at 350 degrees for 40 minutes or until done. Test with toothpick. Serve with Cool Whip or lemon sauce. This is great, everyone loves it.
