3/4 c. softened butter 1 egg 2 1/2 c. sifted flour 1/4 tsp. salt Red food coloring 2 tbsp. coconut, chopped 1 (1 oz.) sq. unsweetened baking chocolate, melted 1 1/4 c. sugar 1 tsp. vanilla 1 1/2 tsp. baking powder 1/4 c. candied cherries 1/4 c. finely chopped nuts 1/4 tsp. almond extract Cream butter and sugar. Add egg and vanilla; mix well. Sift the 3 dry ingredients and add to egg mixture. Divide dough into 3 parts. To one part add the chopped cherries and the red coloring. To the second part add the chocolate and the nuts. To the third part add the coconut and almond extract. Line a 7 1/2 x 2 3/4 inch bread pan with waxed paper. Spread the cherry batter on the bottom, then the chocolate mixture, and then the coconut mixture on the top. Cover with waxed paper and chill for several hours or overnight in the refrigerator. Cut in 1/8 inch thick slices and cut each slice into thirds. Bake on an ungreased cookie sheet for 10-12 minutes at 350 degrees. |
