CURRY-CRUSTED BANANAS 
4 firm bananas, peeled
1 stick melted butter
1 teaspoon curry powder
2 cups crushed Cornflakes
Sugar for sprinkling (optional)

Preheat the oven to 450°F. Half the bananas lengthwise, then crosswise. In a bowl, mix the melted butter and the curry powder. Dip the bananas in butter mixture. Roll in the cornflakes until completely coated and sprinkle with sugar, if desired. Place the bananas in a greased baking dish and bake for 10 minutes. This side dish is wonderful with baked ham or pork chops or roast pork.
