BUTTER BEAN CASSEROLE 
1 med. onion, sliced
3 tbsp. salad oil
4 c. large butter beans, cooked or canned
Salt and pepper
1 tsp. salt-free blend of herbs and spices
1 1/2 c. Colby cheese, grated
1 1/2 c. half and half cream (I use Milnot)
3 or 4 slices bacon, raw

Saute onions in oil; pour into buttered casserole dish. Layer 1/2 of butter beans, lightly season each layer with salt, pepper, and spices; layer onions over beans. Add remaining beans; sprinkle with grated cheese. Cover with half and half. Lay bacon slices on top.

Bake in 350 degree oven for 30 or 40 minutes or until bacon is cooked.

(I use lemon pepper and omit part of salt.)
