POTATO SALAD FOR 50 
12 lbs. red potatoes
3/4 c. salad oil (or bacon fat)
1/4 c. prepared mustard
1/2 c. apple cider vinegar
1 tbsp. sugar
1 tbsp. salt
1 tsp. pepper
Mrs. Dash Seasoning
2 bunches celery, finely sliced
2 bunches green onions & tops, finely chopped
1 1/2 sm. flat cans sliced black olives, drained
1 (4 oz.) jar chopped pimentos, drained
1/2 lb. carrots, shredded
1 dozen boiled eggs, chopped
1 qt. Hellmann's mayonnaise

Peel potatoes; cover with cold water and boil just until tender; drain. As soon as cool enough to handle, slice into small pieces. Mix the next 7 ingredients and add to potatoes while still warm. Mix thoroughly and let sit for 15 minutes to marinate. Then add the rest of the ingredients. Chill thoroughly.
