QUICK RED BEANS AND RICE | |
2 links smoked sausage (about 8 inches each, or a 1 lb. pkg. with sausage in one piece) 1 can red kidney beans 1 med. onion, chopped SEASONINGS: Salt Cay enne pepper Garlic powder Tabasco sauce Worcestershire sauce Slice the sausage links cross-wise about 1/8 to 1/4 inch thick. Place in a 4 to 5 quart pot and add chopped onion. Cook slowly over medium heat until onions turn clear. Add the beans, a little water and seasonings to taste. Let simmer for 15 to 20 minutes, cover, remove from heat, and let stand for 10 minutes. Serve over cooked rice. Serves 1 Cajun or 2 other people. COOKED RICE: 1 c. uncooked rice (med. or long grained) 2 c. water 1 tsp. salt Combine all ingredients in a saucepan or small pot and bring to a boil. Cover and turn down heat to medium. After 10 minutes, turn heat to low. Continue cooking until rice is done. |
