FRIED CRAWFISH (LIGHT BATTER) 
3/4 c. cornstarch
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. water
1 egg, beaten
1 qt. corn oil
1 lb. crawfish tails

Stir together first 5 ingredients. Add water and egg, then stir until smooth. Pour corn oil into large skillet to depth of half full. Heat oil over medium heat to 375 degrees. Dip crawfish in batter and fry 2 to 3 minutes until golden brown. This batter can be made even better by omitting the water and adding 1/3 cup beer. Serves 4 to 6.
