EGGPLANT ROLLS 
2 lg. eggplants, sliced & salted
1/2 lb. ricotta cheese
1/4 lb. mozzarella cheese, grated
1 egg yolk
Plain marinara sauce & more grated mozzarella for topping
Parsley

Fry the eggplants in oil until brown. Mix ricotta cheese, the mozzarella cheese, egg yolk and parsley; put in eggplant. Slice and roll. Place in a glass dish, cover with sauce and more shredded cheese. Bake at 350 degrees for 1/2 hour.
