RECIPE COLLECTION
“PUMPKIN ROLL” IS IN:

PUMPKIN ROLL 
3 eggs
2/3 cup plain pumpkin (not pie filling)
1 cup sugar (maple sugar may be used if available)
3/4 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ginger (optional)
1/2-3/4 cup chopped walnuts or pecans
powdered sugar (for sprinkling)

Preheat oven to 350°F.

Combine all dry ingredients, add eggs and pumpkin (fresh, frozen or canned; if using frozen, drain out excess liquid).

Butter or spray with non-stick spray a jelly roll pan (11x15-inch). Cut a sheet of wax or parchment paper to fit the bottom of the jelly roll pan. Line pan with wax or parchment paper to edges.

Spread pumpkin mixture evenly over paper liner. Sprinkle with chopped nuts.

Bake at 350°F for about 15 minutes or until done.

While the pumpkin roll is baking, spread a large clean cotton dish towel or cloth on a work surface; sprinkle the towel with powdered sugar.

When cake is done, remove from oven. Run a butter knife along edges to release cake from sides. While still warm, invert pumpkin roll onto towel. Gently peel off wax or parchment paper.

Using the towel to help lift the cake, roll up the towel (cake and all) beginning at the short side of the cake; continue rolling until you have the cake in the shape of a jelly roll. Allow to cool in this position.

When the cake has cooled, unroll gently; spread with filling (see below) and re-roll. Refrigerate until ready to serve.

Filling for Pumpkin Roll:

Mix and whip until creamy:

2 teaspoons butter
1 (8 oz.) package cream cheese
1 teaspoon vanilla
1 cup confectioners' sugar

The outside of the pumpkin roll can be frosted (optional) and sprinkled with coconut or nuts, if desired.

I made this for Thanksgiving this year. It was very easy to make and everyone said it was delicious! Thank you for this recipe. I'm going to make this again very soon. I used heavy duty paper towels to roll it up and it worked fine.

I made this last year and it was a hit for sure. I just made 2 more yesterday and if you follow the instructions, you will have no problem. It is so delicious and looks like a picture when you serve it. I make them for gifts, everyone loves them.

I love this recipe! I had such great reviews from guests. If you don't want to use a towel then I offer a simple solution: Use another piece of parchment paper. I used it and it worked for me because I was iffy about using a towel.

You need to use a DAMP towel sprinkled with powdered sugar, and only let the roll cool for 20 mins before putting the filling in it to keep it from cracking :)

I love this recipe and I found the sticking problem too so I would grease my wax paper and no problems would slide right out and for the towel use like a kitchen hand towel that doesn't soak very good.

I have been making this recipe for 25 years not started when is was in my 20's. Found out over the years to use a tea towel works better and I skip using parchment or wax paper. I usually have requests for around 15 every Christmas.

I love this recipe! I am trying to work out the small bugs though, cake stuck to towel. Also recommend using parchment over wax paper, wax paper seemed to stick to the cake as well...
Still trying to solve the problem I had with the cake cracking as i was unrolling it too, but it didn't make too much difference :)

I've made this cake MANY times and it is always a hit! Andrew, one thing you might try is using a different towel. I had the same results as you in my first attempt but for my second try I used a kitchen towel with shorter fibers and was not as absorbent. PERFECT! Thanks CM for sharing this delicious and easy to make recipe!

I as well love this recipe. I noticed also that the cake sticks to the towel, I am planning on making more tonight so I am going to try to line the towel with parchment paper hopefully it will make a great amount of difference and hope then the roll wont crack once I unroll it. Thanks for the recipe.
