MULLET DIP 
1 c. mullet flakes (not to fine)
2 pkgs. cream cheese
1 tsp. grated onion
1 lemon, squeezed
1 datil pepper, seeded
1 tsp. AIA sauce
Salt and pepper

Use mullet that has been cooked - fried, boiled, baked, etc. Soften cheese, add mullet, onion, datil pepper (cut up fine), lemon, AIA sauce, salt and pepper to taste. Refrigerate until used. Serve with crackers or chips. You can use any left over fish that is flakey (sheepshead, etc.) instead of mullet.
