BEETS WITH ONIONS 
1 (1 lb.) can cut beets
1/2 c. onion, sliced
2 tbsp. butter
1 tbsp. cornstarch
2 tbsp. sugar
1/4 c. cider vinegar
3/4 c. liquid from beets
Salt

Saute onion in butter until tender, but not browned. Drain beets into measuring cup. Add water if necessary to make 3/4 cup liquid. Blend with cornstarch. Add with vinegar and sugar to onion. Cook, stirring constantly until thickened. Add beets and heat.
