"MAQUE CHOUX" (MOCK SHOE) 
2 1/2 c. fresh cut corn or (1 can cream style corn and 1 can whole kernel corn)
1 c. chopped onions
1/4 c. chopped bell peppers
1/2 c. peeled and chopped tomatoes
3 tbsp. sugar
3 tbsp. butter
1 sm. can Rotel (optional use only if you like)

In medium saucepan saute onions, peppers in butter. Add corn, tomatoes, sugar. Lower heat and cook, covered, for 3/4 hour. Serve as a side dish or add sauteed shrimp for a hearty main dish. Serves 4 to 6.
