HOT PEPPERS IN OIL 
Wash peppers, remove seeds. Cut in pieces with scissors. Soak overnight in 1 gallon vinegar, 1 cup salt, oregano and minced garlic. Drain. (Reserve vinegar for next turn.) Pack peppers in jars. Add 1 clove garlic, shake of oregano. Fill jars with oil. Seal jars.
