BROCCOLI SALAD 
4 bunches broccoli florets (only)
1 c. raisins
1 c. slivered almonds
1/2 to 1 c. chopped red onion
10 slices crisp bacon (optional)
2 c. mayonnaise
1/3 c. sugar
1/4 c. red wine vinegar

Cut florets from broccoli bunch. Wash. Leave air dry or roll in a towel. The trick to this recipe is making sure broccoli is completely dry. I do it a day ahead.

Combine mayonnaise, sugar and vinegar. Combine broccoli, raisins and almonds (and bacon if used). Add dressing. Don't add the dressing more than 4 hours in advance as it becomes soggy.
