HOT MILK SPONGE CAKE | |
2 eggs 1 c. sugar 1 c. flour 1/2 tsp. salt 1 tsp. baking powder 1 tsp. vanilla 1/2 c. hot milk 1 tbsp. butter Beat eggs. Add sugar and beat again. Add flour sifted with salt and baking powder. Add vanilla. Beat in milk and butter. The milk must be hot. Drop the butter in the milk and heat until just before boiling. The batter will be thin. Bake in 8 x 8 inch pan for 45 minutes at 350 degrees. Double recipe for 9 x 13 inch pan. This can be used for an upside down cake, also. To make upside down cake mix: 3/4 c. brown sugar 2 tbsp. butter In bottom of pan - heat until melted. Pour 1 layer of fruit (pineapple, apricots, etc.) on top of sugar mixture. Pour over fruit and bake as above. |
