FISH WITH APPLES, POTATOES, AND
LEEKS
 
2 lbs. boneless fish fillets
1 lg. potato, julienned
1 lg. leek, julienned
2 apples, peeled, cored, and sliced
2 tbsp. salad oil
Salt and pepper (to taste)

Season fish with salt and pepper. Toss the apples, leeks, and potatoes together with salt and pepper. Heat oil over medium-high heat. When oil is hot lay half of the apple mixture in the skillet. Place fish on top; cover with remaining apple mixture. Turn the fish and apples over and bake at 300 degrees until fish is done, about 10 minutes.
