4 c. apples, peeled, cored & chopped fine (takes about 5-6 apples) 2 c. sugar 2 eggs, beaten 1/2 c. salad oil 2 tsp. vanilla 2 c. flour 2 tsp. baking soda (not powder) 2 tsp. cinnamon 1 tsp. salt 1 c. chopped walnuts Mix apples with sugar and set aside while you do the rest. Mix eggs and salad oil together and heat a bit. Add vanilla to this. Sift together the dry ingredients. Now add the egg mixture to apple-sugar; mix well. Next add the dry ingredients, mixing well. Fold in nuts. Put all in greased, floured 9 x 13 inch flat baking dish and bake at 325 degrees for 35-40 minutes. Serve warm or cool in dish. It's great plain, topped with whipped cream, vanilla ice cream or hard sauce. Freezes well. |
