FRANK'S® CHEESECAKE | |
CRUST: 1 1/4 c. Sunshine graham cracker crumbs 1/4 c. fine chopped walnuts 1/2 tsp. cinnamon 1/2 c. melted butter (1 stick) FILLING: 3 eggs 3 (8 oz.) pkgs. Philadelphia cream cheese 2 (8 oz.) containers sour cream 1 c. sugar 1/4 tsp. salt 2 tsp. vanilla extract 1/2 tsp. almond extract 1 can cherry pie filling (or blueberry, etc.) Mix crust ingredients and press on bottom and sides of buttered 9" form pan, sides should be 1 3/4" high. Put eggs, vanilla extract, almond extract and salt in blender and blend. Add cream cheese to blender, one package at a time and blend. Pour contents of blender into bowl and fold in sour cream and sugar until smooth. Put filling into the crust in the form pan and bake in oven at 350 degrees for 40 minutes (give or take) until sides begin to rise (center will remain down, sort of). Remove from oven and let cool to room temperature. Then place in refrigerator for 4 to 5 hours. Add cherry filling (or whatever) when ready to serve. Serves one very small office (if Frank doesn't show up hungry). |
