CARROT RAISIN COOKIES 
1/3 c. salad oil
1/3 c. molasses
1/3 c. brown sugar
1 egg
1 c. flour
1 tsp salt
1/4 c non-fat dry milk
1/2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp cinnamon
1 c raw carrots, grated
3/4 c. raisins
1 1/2 c. quick or old fashion oatmeal

Beat oil, molasses, sugar and egg in a bowl. Blend in flour, milk, salt, baking powder, soda and cinnamon. Stir in carrots, raisins and oats. Dough is very stiff. Drop by level tablespoonfuls onto greased cookie sheets.

Bake at 400°F for 10 minutes.

Makes about 36 cookies.
