SUNNY CARAMEL CORN | |
4 qts. unsalted popcorn, popped 1/2 c. butter 1/2 tsp. salt 1 c. brown sugar, packed 1/4 c. light corn syrup 1/2 tsp. baking soda 2/3 c. toasted sunflower seeds or peanuts (optional) Divide popped corn between two large bowls. Set aside. Combine brown sugar, butter, corn syrup and salt in 4 cup glass measuring cup. Microwave on 100 percent power for 3 to 3 1/2 minutes, until mixture boils, stirring once. Lower power level to 30 percent and microwave for 4 minutes. Stir in soda. Pour 1/2 of the syrup evenly over each bowl of popped corn and add peanuts and stir lightly to coat. Microwave on 50 percent power, one bowl at a time, for 6 to 7 minutes, stirring twice. |
