COTTAGE ROASTED JERUSALEM
ARTICHOKES
 
1 1/2-2 lb. Jerusalem artichokes
1 baked chicken (from standard recipe)

Peel artichokes, or leave unpeeled. Slice about 1/2 inch thick. An hour before chicken is to finish roasting, place artichoke slices around the pan. Baste and turn occasionally and remove when golden brown. Serve around the meat. Makes 4-6 servings.
