BREADED ONION RINGS 
2 med. Bermuda onions (1 1/2 lb.)
Salad oil or shortening (for deep frying)
1 1/4 c. flour
1 tsp. salt
1/4 tsp. baking powder
2 eggs
1 c. milk
1 tbsp. salad oil

Peel onions, slice into rings and separate. Heat oil to 375 degrees in electric skillet or heavy saucepan. Sift flour, salt and baking powder together.

In large bowl beat eggs slightly. Add milk, oil and the flour mixture together. Beat until smooth. With 2 tined fork, dip onion rings in batter (let excess batter drip into bowl.

Drop rings a few at a time into hot fat. Fry turning once until golden brown. Remove to paper towel-lined cookie sheet. Keep warm in a 200 degree oven while frying remainder. Sprinkle with salt.
